“My recent attendance at the Mimi Bite Gastronomic cooking school classes was truly an incredible experience. The school was fully equipped with every imaginable culinary tool, making me feel right at home.

 

Each year, I embark on a culinary safari to various stunning destinations abroad to broaden my knowledge and skill set. This year, I was particularly inspired by sampling and deciphering the secrets of traditional Basque cuisine, which was unquestionably the highlight of my trip. Mediterranean food always captures my heart, and being able to incorporate so many new ideas, flavour combinations and inspiration into my restaurant in the Faroe Islands is profoundly fulfilling.

 

The school was conveniently located in a luxury hotel in San Sebastián, the Maria Cristina, a stone's throw away from the iconic old town.

Learning the secrets of various cuisines is always enlightening. The ingredients used in any dish are influenced by the climate, culture, the country's weather, and what is grown and cultivated from the land, water, sky, or ground.

 

While the dishes, techniques, methods, and ingredients I learned about in Spain may seem foreign and unlikely to be used in my culinary home in the Faroe Islands, it's about satisfying my chef's desire to learn, understand, and possibly adapt.”

Her smiling welcome, attention to details, and commitment to the quality of her food are apart from the competition.

 

Customers consistently comment on each meal's flavour, quality, and presentation, and the friendly, welcoming environment and beautiful view that changes with the seasons.

Meet the owner

I (Rose - chef/owner) love cooking, and the most important thing for me is bringing people together and ensuring they enjoy themselves. I am passionate about good food. Regardless of the type of dish, there is an art to making it as good as possible while staying true to its origins.

 

Organic, locally sourced ingredients are used to the greatest extent possible, and everything is from scratch and not processed.

Cooking starts with the eyes, but ultimately, it is about nourishing our bodies

Healthy, delicious food is not an accident; it is a deliberate endeavour that guides me in my planning and execution of cooking. From organic ingredients to low-fat cooking seasoned with high-quality spices and flavours, these are integral to the meals I prepare.

My story

I grew up on a farm in Ethiopia. We grew much of our food. My father grew vegetables and grains and kept various animals. My mother used to say she didn't want to feed her children old food because she believed that raising children with fresh and good food makes children healthier. She was (and still is) my best role model for my day-to-day life.

 

After being in the restaurant business for five years (five challenging years) and ten years in the food industry, I have learned so much and matured as one of the strongest and best chefs. I am grateful for the opportunity to share my passions with my customers, who appreciate it.

 

My husband, Pól, is a native of the Faroe Islands. He has been working with fish all his life; he started fishing with his father at the age of seven and continued until he was 14. Pól smokes our salmon in the old-fashioned way, producing a healthy, delicious product, and he helps out with business when he has time.

 

We combine our love of good food and appreciation for different cultures to give you a truly unique dining experience.
